Westwell - Rabbit Butchering

We caught a rabbit today in our rabbit traps. Linda's father, Richard, has been anxiously waiting for a chance to show us how you skin them. As he was here this weekend it was lucky that our first capture happened today.

I have a good book on home butchering, but the reality was much simpler than I thought.

I should point out that Richard did most of the skinning and gutting. I diced the body into portions after that.

I broke its neck or at least thought I had, but it ended up nearly being twisted off by Rich before it died. Once that was done you cut around the feet, then behind the head and then between its back legs. The skin can then be pulled off like a sock.
